I know what you are thinking? First we hide tofu in a burger and now avocado in chocolate pudding? But let me tell you, the same sceptics who typically scoff at tofu, will absolutely LOVE this mousse. It’s rich, it’s chocolatey, it’s creamy and buttery, when in fact, there is no chocolate, no cream, and no butter in sight. This is a decadent chocolate mousse you would be proud to serve to your pickiest dinner guest and one you can enjoy guilt free!
Avocado Chocolate Mousse
2 medium ripe avocados
7 - 9 fresh dates, pitted and roughly chopped
1 ¼ cups coconut milk, almond milk, or filtered water
1/3 c. raw cacao powder, or more to taste
1 teaspoon natural vanilla extract or pure vanilla bean powder
Pinch of unrefined sea salt
Soak the dates in milk or water for 10 to 30 minutes
In a blender, place the avocado flesh, dates (along with their soaking milk or water), cacao powder, vanilla, and salt. Blend until smooth. You may need to add a little more liquid to facilitate blending. Scrape the sides of the blender down a few times during the process. Adjust ingredients to taste.
Transfer into serving dishes and put in fridge for 1 hours, garnish with your choice of toppings, such as dried coconut, grated dark chocolate, or berries.
